While the latter is contained within extremely polluting plastic packaging that affects the quality of the air we breathe due to continuous road transport, the water treated by microfiltration is water with a green soul and zero kilometer : this makes it environmentally friendly because it does not need special packaging to be drunk.

From its origins to the present day The ingredients of Lecce coffee are essentially coffee, almonds and ice. Legend has it that cold coffee arrived in Italy from the Iberian peninsula, docking at the port of Otranto as early as the 15th century. Soon spread to the rest of Salento and Italy, it was the addition of almonds that gave rise to the particular version that can be enjoyed today in Lecce. This is the reason behind the name of the recipe, also known throughout the world as Lecce cold coffee or Salentina coffee. According to a much more recent version of the myth, it was Antonio Quarta, owner of the local Quarta Caffè roastery, who first had the idea of mixing coffee with pieces of ice to beat the extreme Apulian summer heat. The pieces of ice were crushed into small irregular cubes, placed directly into the steaming cup and then sweetened to taste.
