The main characteristic of our parmigiana is centered on the processing of the main ingredient: in fact we start by peeling the aubergines after having sanitized them. These are then cut into slices lengthwise and with a thickness of about 0.5 cm, then they are dipped in the batter made with sparkling water, flour and salt, and then they are fried for a few minutes in a pan with plenty of oil. always taking care to cook them on both sides.
