Our Enzo, with decades of experience from Rosso Pomodoro, is constantly looking for the super hydrated dough - the flour is processed with higher than average percentages of water, today we can offer highly digestible pizza with the best ingredients, a long pizza maturation.

The Peeled Tomato, from Gragnano IGP, an exclusive selection. Extra virgin olive oil is added only at the end of cooking: different types of award-winning labels to enhance the individual ingredients of each pizza. The pizza menu changes with the seasons and is the result of research that gives space to DOP and IGP branded products such as buffalo mozzarella, Ciauscolo, 24-month Parmigiano Reggiano, and local rarities of small artisans of taste.
